01 — HARVESTING


It Begins in the Olive Grove


The journey begins with the olive harvest. Olives are carefully collected from the trees and gathered for processing, with attention given to protecting the fruit from unnecessary damage.

The time between harvesting and milling is important in preserving the freshness, aroma and quality of the resulting olive oil.

02 — SORTING & CLEANING


Preparing the Olives for Milling


After harvesting, the olives are brought to the mill where leaves, small branches and other field material are removed.

The olives are then carefully washed to remove dust and impurities before entering the crushing stage. Proper handling at this stage helps preserve the natural characteristics of the fruit.


03 — CRUSHING


Crushing the Olives

Once cleaned, the whole olives are crushed—including the flesh and pits—to create a thick olive paste.

Crushing releases the tiny droplets of oil contained within the fruit and prepares the olive paste for the next stage of extraction.

04 — SEPARATION


Gently Mixing the Olive Paste


After crushing, the olive paste is slowly mixed in a process known as malaxation. This allows the tiny droplets of oil released during crushing to combine into larger droplets.

After malaxation, the olive paste enters a centrifuge where the oil is separated from the water and solid components of the olives.
This careful separation reveals the fresh olive oil, preserving its natural color, aroma and distinctive flavor before it moves to the storage stage.


05 — STORAGE & BOTTLING

Preserving Quality to the Final Bottle


After separation, the fresh olive oil is transferred into clean, food-grade stainless-steel tanks, where it is carefully stored and protected from light, heat and oxygen to help preserve its natural aromas, flavor and quality.

When ready, the olive oil is bottled and sealed, protecting its freshness until it reaches your table.

From the olive grove to the final bottle, every stage of the journey plays an important role in preserving the character and quality of Lebanese extra virgin olive oil.
